First off congrats on your new purchase!
On to your questions..
Can I use a Sata drive run from a PCI Sata controller card as the boot drive?
Yes you can. I am booted from a SATA drive on a PCI card as I type this. For your needs I recommend the 4 channel PCI SATA card FirmTek sells.
Will the power supply be up to running 6 hard drives inside? (4 in standard locations and one in each 5.25 bay)
Yes. The Dual 867 has a 400 Watt PSU and can easily handle 6 drives. All modern drives consume around 12-15 Watts so even 6 would only be around 75-90 Watts. Unless you want to use more than one SATA PCI card you will have to make 2 of the drives PATA.
Are there any perennial issues with this model I should look out for?
The MDD is the most troublesome G4 tower but keep in mind the repair/recall on these was only for about 6% of them which is very good compared to G5 towers that range from 11-32% of systems needing repair. I have owned 2 MDD in the past and based on that and other research I have done the Dual 867MHz is the most rock solid of them all. The MDD's main issues were fan noise and some of the PSU's die after just a few years. There are a few guides around though on how to rig a standard 24 pin ATX PSU to power an MDD.
Considering it's about 8 years old now and still running you definitely have a good one.
I want to give it a good going over before I get it up and running. I was going to clean and reapply Arctic silver to the CPU/heatsink interface, upgrade to 2Gb RAM, replace the rather noisy fan with a higher CFM quieter version and anything else you guys can recommend

Thinking it out:
Stick = Up/Down
Bottom Red = Reverse
Right-Botton Black = Thrust
Right-Top Black = Fire
Top White = Smart Bomb
Bottom White = Hyperspace
On Stargate you could assign one of the others to the Stealth mode button too.
They NEED 2 versions of iCade - one with joystick, the other with a Trackball and Knob... ;)

I want a device the size of an ipod that I can check my mail on, chat, and do some web-surfing for info, all without the ridiculous GUI deformities of windows mobile and treo, etc. and simple, easy to use hardware to back it up. I want to take it out of my pocket, see what I want, then put it away. Seamless integration with my macs as well.
Maybe I'm in a nitch, but I don't see how this could lose. Make it simple, powerful, and seamless and people will ditch the baffling ordeal of their ipaq-esque phones in a heatbeat.
I'm in the same boat. There are enough of us to sell a ton of those phones. Bring it on !

I had no idea what the Original post was talking about until Dreadnought pointed it out.
You can also try restarting the computer and even power-cycled your network if the problem is still there after trying Dreadnought's suggestion.

What is a Kernal Panic?
Im guessing I probably shouldn't mess with it then? I really enjoy having a stable system at the moment. This computer is just about perfect. Just wish I would have bought the 15" instead of 13" MBP. I will be taking it back tomorrow or the next day, weather permitting of course. Here in Dallas we have been getting some wicked nasty snow storms, for around here anyway.

Agreed, .mac had a solid, sensible, identifiable connotation. I wasn't a mac guy at the time, but it whenever I'd see it, conveyed that Apple was providing a decent service package for it's users. I wish they'd simplify, combine & condense all these services, give all their iTunes and new hardware customers an account, and give at least one or two services away free to get people using it in some capacity. ...find my iPhone/iPad, or contact/cal/limited storage push syncing... But just go back to calling the whole package ".mac" again. Clean, short, clear, promotes the brand without being obnoxious.
It'll never be '.mac' again. Apple's ecosystem has changed too much since then, and it's not all about the Mac anymore. But I agree they need a free service which at very least includes syncing between devices, and a small amount of online storage.

So, if you don't like a white iphone, buy black. It's all good:-)
I like black, but my daughter likes white. When I asked why, she said it goes well with her white ipad and white MacBook, when they are all on her desk.
Sounds like as good a reason as any.
She has a 3GS off contract that is totally on it's last legs (broken glass replaced with plastic, battery empty mid-day), so her only decision is to wait out the next iphone or not.
Unfortunately she has never been able to wait for anything(despite me mentioning not to buy 1st gen Apple products), so she'll probably buy the ip4 in white.
I bet there are many people out there in the same situation.
